Vegetable Pulao  is a spicy Indian rice dish that is made by cooking basmati rice with various vegetables & spices. The uniqueness of vegetable pulao recipe lies in use of different spices like bay leaf, cloves and cinnamon which gives it a nice aroma. vegetable pulao can be made in pressure cooker, electric cooker or normal pan.  

Ingredients:

  • 1/2 cup Basmati Rice
  • 1 finely chopped onion
  • 1 finely chopped tomato
  • 1/2 cup Green Peas, French Beans and Carrot
  • 2 Bay Leaf
  • 3 piece Cinnamon
  • 2 Cloves
  • Garam Masala Powder
  • Turmeric Powder
  • Red Chilli Powder
  • Chopped Coriander Leaves
  • 2 tablespoons Oil and 1 teaspoon Ghee
  • 1 cup Water
  • Salt

Method

Step 1 - Wash basmati rice and soak it in water for half an hour. Drain & keep aside.

Step 2 - Heat oil and ghee together in a pressure cooker on low flame. Put bay leaf, cinnamon, clove, and sauté for 15-20 seconds. Then add onion and stir fry until it turns light brown.

Step 3- Put chopped tomato, french beans, green peas and carrot.

Step 4 - Sauté for 2 minutes.

Step 5 - Add soaked basmati rice, garam masala powder, turmeric powder, red chilli powder & salt.

Step 6- Cook them for 5 minutes.

Step 7 - Then add 1 cup water and mix everything properly.

Step 8 - Close the lid & cook over medium flame until 2 whistles. After 2 whistles cook it on low flame for another 5 minutes.

Step 9 - Let it cool at room temperature until pressure inside the cooker comes down naturally. 

Transfer the dish in a serving bowl and enjoy it with green chutney, boondi raita and pappad.
